Elizabeth McLellan Boland

Elizabeth McLellan Boland was born and raised in Portland, Oregon.  She grew up the youngest of five children in a close-knit Irish Catholic family.  Meals were always a time of heated political debate, family togetherness, and of course, good food.  Being the baby of the family allowed Itabit (Elizabeth’s nickname) to hone her cooking skills, especially when her mother returned to the workplace (when Elizabeth was ten).  Elizabeth was in charge of cooking some nights, and sometimes interesting dishes appeared on the table (like peanut butter and mustard sandwiches!)

After finishing college, getting married, and starting a family, Elizabeth left Portland, bound for Seattle.  She became known for her delicious dinners and pretty table-settings.  No matter how many soccer practices or how much homework her brood had, dinner was always on the table.

Over the years, Elizabeth has become a great cook.  She is never afraid to try out a new recipe or bring an old one up to date. She is always a phone call away for a quick explanation of technique or a remedy to a kitchen disaster.  She has been a patient teacher to her four kids, and claims to enjoy her food burnt – as long as it was lovingly prepared by one of her children.

We promise not to burn any of her specialities and…’ERIN GO BRAGH!’
