Orange-Cranberry Sauce

Servings 6 -8 servings
I learned how to make this wonderful condiment at Le Cirque, where it was served with duck.  It’s just as delicious with turkey, and it’s become a staple at Mother’s Thanksgiving dinners. The sauce takes well to other spices, so feel free to add a teaspoon of cinnamon or five-spice powder. The sauce freezes well, so if you have any extra, serve it with your next roast chicken dinner, too.

  • 1 (12-ounce) package fresh cranberries
  • 1 cup orange juice
  • Zest of one orange Citrus zest is packed with flavorful and aromatic essential oils that pack a punch when added to dishes like this. The trick isto remove the zest (the colored part of the skin) without getting any of the bitter white pith. The best tool is a rasp-style Microplane grater with fine holes. These remove the zest (or grate cheese) almost effortlessly and don’t dig too far into the pith of the fruit. If you don’t have one, use a vegetable peeler to carefully remove the colored skin in strips. Then very finely dice itwith a sharp knife.
  • 1 cup granulated sugar


  • Pick through the cranberries and remove any that are squishy and soft, as well as any stems.Rinse the remaining cranberries in a colander and place in a medium saucepan.Add orange juice, orange zest and sugar, mixing well with a wooden spoon.
  • Place the saucepan over medium-high heat and bring to a boil. Reduce heat to medium and simmer,stirring occasionally, until the cranberries begin to burst and the mixture is saucy, about 10 to 15 minutes.
  • Remove pan from heat and transfer mixture to a bowl or serving dish to cool. Let cool to room temperature, then place in the refrigerator until ready to serve.
